This time of year, the heat in the South is oppressive, and that really affects the appetite. Often, particularly for lunch, all I want is a hearty, cold salad. I start with a packaged kale salad kit because I like the little package of pine nuts and dried cherries. Then, I add a combination of ingredients that add color and flavor. I always make my own poppy seed dressing, but you could certainly use the one that comes with the kit if you want to save time.

1 13- or 14-ounce kale salad kit
1 small Ambrosia apple, finely chopped
1 small cucumber, peeled, seeded and chopped
1 red, yellow or orange bell pepper, cut in slivers
1/3 cup hand-grated Parmesan cheese
1/3 cup sliced almonds

Poppy Seed Dressing

½ cup sugar
1/3 cup cider vinegar
1 teaspoon salt
3 green onions, trimmed
1 tablespoon poppy seed
1 teaspoon dry mustard
1 cup Canola oil

To make the dressing, place all of the ingredients except oil into the boil of a food processor and process until smooth. Slowly drizzle in oil while motor is running and process until the dressing is emulsified. Pour into a glass jar and refrigerate.

To make salad, place the greens on a large mixing bowl. Add the package of pine nuts and dried cranberries that come with the kit. Add the other ingredients. Pour 1/3 cup of dressing on the salad and mix well. Add a little more dressing if needed.

Serve in refrigerated salad bowls. Serves 4.
